Casa din Tioc is a small farm in the Transylvania countryside. I keen on traditional and medieval cooking, trying to bring back to life old culinary recipes (my friends call me The Meat-Man).
I have been cooking since I was little, learning from my parents as everybody cooks in our family and I formally studied gastronomy.
I want to present the old ways of preparing the pig products, especially sausages, which are loved by almost everyone. I also want to re-create the atmosphere in the old days when the family was gathering together for the event of cooking the pig, which was an event with the accent on the family reunion more than the meat and the products themselves.
We will also present the advantages of local food and slow cooking (which I am very keen on).
I will be waiting for you around noon and after a traditional Transylvanian welcome we will have a tour of the farm where you can admire a small collection of old tools and antiquities.
We will spend a bit of time in the fresh countryside air, then in the kitchen, preparing some delicious sausages.
We will talk about local products, slow food, cooking history and Transylvanian gastronomy while preparing some delicious sausages, using only meat, spices and salt. Once finished, we will cook the sausages and taste them along with some local products, some of which you can buy before leaving.
We will provide the meat, casings, local spices and everything needed for preparing the sausages.
